Colors of the rainbow look even better when combined on a salad plate. Make this salad a full meal by adding lean protein or cottage cheese!
Ingredients:
1 bag ready mix lettuce
2 oranges, sliced
1 cup red seedless grapes
2 kiwis, sliced
¼ cup dried cranberries
¼ cup chopped walnuts, pecans or slivered almonds
Reduced fat vinaigrette dressing, about 4 tbsp
Directions:
1 Place lettuce on individual salad plates.
2 Alternate orange and kiwi slices like a pinwheel around the middle of each plate.
3 Sprinkle grapes, dried fruit and nuts on top. Drizzle with reduced fat vinaigrette dressing.
4 ENJOY!
