Ingredients - Coffee Cake:
- 1 1/2 cups flour
- 1/4 cup brown sugar
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup unsweetened applesauce
- 1/3 cup non-fat milk
- 2 tablespoons canola oil
- 1/2 cup egg substitute
- 1 teaspoon almond extract
- 1 teaspoon lemon zest
- Topping:
- 1/4 cup flour
- 1/4 cup packed brown sugar
- 3 tablespoon light margarine or spread
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
Instructions - Combine topping ingredients with a pastry blender or 2 knifes until crumbly. Set aside.
- Preheat oven to 350 F. Prepare 9-inch cake pan with cooking spray and flour.
- Sift flour, sugar, baking powder, soda and salt into a large bowl.
- Add applesauce, milk, oil, egg substitute, extract and lemon zest. Mix until well blended.
- Transfer batter to prepared pan. Sprinkle topping over batter.
- Slice into 12 pieces.
