Ingredients - 8 cups arugula leaves
- 3 navel oranges, peeled and cut into sections
- 1 cup thinly sliced fennel bulb
- Freshly ground black pepper
- Dressing:
- ¼ cup orange juice
- 2 tbsp lemon juice
- 2 tbsp champagne vinegar
- 2 tbsp olive oil
- 2 tsp Dijon mustard
- 1 garlic clove, crushed
- Salt and pepper to taste
Instructions - Combine dressing ingredients and whisk well.
- Toss arugula leaves and fresh ground pepper with dressing. Arrange orange slices and sliced fennel over mixed greens.
