Ingredients
  • 8 cups arugula leaves
  • 3 navel oranges, peeled and cut into sections
  • 1 cup thinly sliced fennel bulb
  • Freshly ground black pepper
  • Dressing:
  • ¼ cup orange juice
  • 2 tbsp lemon juice
  • 2 tbsp champagne vinegar
  • 2 tbsp olive oil
  • 2 tsp Dijon mustard
  • 1 garlic clove, crushed
  • Salt and pepper to taste

Instructions
  1. Combine dressing ingredients and whisk well.
  2. Toss arugula leaves and fresh ground pepper with dressing. Arrange orange slices and sliced fennel over mixed greens.
