Jicama adds a crunchy, sweet texture to salad. Serve this salad as an accompaniment to grilled chicken, Mexican style dishes or grilled fish.
Ingredients:
1 jicama, peeled and chopped
1 red pepper, diced
1 avocado, peeled and chopped
2 tablespoons capers, rinsed
Kosher salt and Mrs. Dash to taste
Reduced fat vinaigrette dressing, about ¼ cup
Directions:
1 Combine all ingredients in bowl. Season to taste.
2 ENJOY!
