Crunchy and cool cucumbers are the perfect addition to any summer meal or snack. They pick up the flavor of marinades quite well.
Ingredients:
1 tablespoon olive oil
3 tablespoons balsamic vinegar
1/8 teaspoon black pepper
1 medium cucumber, peeled and thinly sliced
1/2 small onion, thinly sliced
1/4 cup thinly sliced radishes
2 tablespoons chopped fresh parsley
Sea salt to taste
Directions:
1 Whisk oil, vinegar and pepper in a medium bowl.
2 Add cucumber, onions, radishes and parsley. Toss gently to coat.
3 Cover and marinate for about 4 hours. Serve with a slotted spoon.
4 ENJOY!
