Creamy soups really warm the soul on chilly days! And, with a few simple modifications, they can be health too!
4 large baking potatoes
2/3 cup all purpose flour
6 cups 1% milk
1 cup shredded 2% cheddar cheese
½ tsp salt and black pepper
4 sliced turkey bacon, cooked and crumbled
½ cup fat-free sour cream
5 green onions, chopped (save some for garnish)
1 Wash and prick potatoes. Microwave 2 at a time, for 8-10 minutes. Scoop out the flesh, mash and set aside.
2 Place flour in a heavy stockpot over medium heat. Slowly pour in milk and whisk until blended. Cover and cook until thickened, about 8 minutes. Add potatoes, ¾ cup of cheese, salt and pepper and bacon.
3 Remove from burner and add green onions and sour cream. Return to burner and simmer on low for 8-10 minutes. Garnish with remaining cheese and green onions.
