Creamy soups really warm the soul on chilly days! And, with a few simple modifications, they can be health too!

1 | Wash and prick potatoes. Microwave 2 at a time, for 8-10 minutes. Scoop out the flesh, mash and set aside. |
2 | Place flour in a heavy stockpot over medium heat. Slowly pour in milk and whisk until blended. Cover and cook until thickened, about 8 minutes. Add potatoes, ¾ cup of cheese, salt and pepper and bacon. |
3 | Remove from burner and add green onions and sour cream. Return to burner and simmer on low for 8-10 minutes. Garnish with remaining cheese and green onions. |
