Herbs add color and tons of flavor to this low-fat super side dish!
1 pound potatoes
1/2 cup chopped red bell pepper
1/2 teaspoon dried basil
1/4 teaspoon dried thyme
1/4 teaspoon onion powder

3 Tablespoons plain nonfat yogurt
1 Tablespoon light mayonnaise
1 1/2 teaspoon prepared mustard
1/2 teaspoon chopped garlic
1/4 Tablespoon salt
1 Scrub potatoes and cut into cubes. Place in medium saucepan and cover with water. Bring to a boil.
2 Cover, reduce heat and simmer 12 minutes or until potatoes are done. Drain.
3 Mix dressing ingredients. Combine hot potatoes, dressing, peppers, basil, thyme, and onion powder. Serve hot or cold.
