Everyone loves sugar cookies - especially on special days! Get out your pumpkin cookie cutter and surprise your friends and family with these low-fat cookies!

| 1 | Preheat oven to 375°F. |
| 2 | Beat margarine, sour cream, egg, and almond extract in medium bowl until smooth; mix in sugar. Mix in combined flour, baking powder, and salt. Refrigerate dough 4 to 6 hours. |
| 3 | Roll dough on floured surface to 1/4-inch thickness. Cut cookies into shapes with cookie cutters. Sprinkle with desired colors. Bake on cookie sheet sprayed with cooking spray until lightly browned, 8 to 10 minutes. Cool on wire racks. |
| 4 | Yield: approximately 36 cookies (depending on size of cookie cutters). |
