Everyone loves sugar cookies - especially on special days! Get out your pumpkin cookie cutter and surprise your friends and family with these low-fat cookies!
Ingredients:
1/2 cup margarine (trans fat free), softened
2 tablespoons fat-free sour cream
1 egg
1 teaspoon almond extract
1 cup powdered sugar
2 cups flour
1 teaspoon baking powder
1/4 teaspoon salt

Directions:
1 Preheat oven to 375°F.
2 Beat margarine, sour cream, egg, and almond extract in medium bowl until smooth; mix in sugar. Mix in combined flour, baking powder, and salt. Refrigerate dough 4 to 6 hours.
3 Roll dough on floured surface to 1/4-inch thickness. Cut cookies into shapes with cookie cutters. Sprinkle with desired colors. Bake on cookie sheet sprayed with cooking spray until lightly browned, 8 to 10 minutes. Cool on wire racks.
4 Yield: approximately 36 cookies (depending on size of cookie cutters).
