Ingredients
  • 1 cup diced onions
  • 2 cloves fresh garlic, minced
  • 1 Tbsp fresh or canned jalapeno peppers, chopped
  • 1 whole green bell pepper, diced
  • 1 15-ounce can red kidney beans, black beans, or pinto beans, drained and rinsed
  • 1 10-oz bag baked tortilla chips
  • 1 fresh tomato, diced
  • 3 ounces shredded lowfat mozzarella
  • Additional Toppings (optional):
  • Fat-free sour cream, salsa, chopped olives

Instructions
  1. Preheat oven to 350 F.
  2. Heat a non-stick pan and saute onions on medium high until clear.
  3. Add garlic and saute for one minute. Add beans, pepper, and jalapenos to pan, cook and stir for about 10 minutes.
  4. Transfer the contents to a bowl. In a seperate bowl, mash bean mixture until smooth, adding water if necessary to make puree smooth.
  5. Place chips on a baking sheet. Spread beans, onions and pepper mixture evenly on top of tortilla chips. Sprinkle cheese and diced tomatoes. Bake until cheese melts, about 10 minutes.
  6. Add additional toppings if desired.
