Ingredients
  • Cajun Burgers:
  • 1 pound extra lean ground turkey
  • 1 red bell pepper, chopped
  • 1/2 cup frozen corn, defrosted
  • 1/4 tsp cayenne pepper
  • 1 tsp minced bottled garlic
  • 4 thin slices light cheddar cheese
  • 4 whole grain hamburger buns, whole grain pita bread or whole grain English muffins
  • Spinach or lettuce leaves and tomatoes for topping
  • Chipotle Sauce:
  • 2 tbsp catsup
  • 1 tbsp non-fat sour cream
  • Tabasco or chipotle sauce to taste

Instructions
  1. Preheat grill (indoor or outdoor grill or frying pan) to medium high. Combine hamburger with red peppers, corn, cayenne and garlic in a medium sized bowl. Form into 4 patties.
  2. Combine chipotle sauce ingredients in a small bowl and set aside. Grill patties 4 minutes on each side or until juices run clear. Remove from heat and top each burger with a thin slice of cheese.
  3. Spread hamburger buns with chipotle sauce, top with burger, spinach or lettuce and tomatoes.
