This tortilla pizza is fun to make with the kids but will please any adult! Use high fiber or whole wheat tortillas for an extra fiber boost.
Ingredients:
1/2 cup ricotta or whipped low fat cream cheese
1 Tbsp confectioners sugar
1 pint fresh blueberries
1/2 cup sliced strawberries
1 large (10-inch) flour tortilla
1 Tbsp butter, melted
2 tsp cinnamon sugar
1/4 cup toasted shredded coconut, divided
