Ingredients - 2 carrots, chopped
- 2 onions, chopped
- 3 celery stalks, chopped
- 2 garlic cloves, minced
- 1 zucchini, chopped
- 2 cups kale, chopped
- 1 28 oz can crushed tomatoes
- 1/2 cup barley, dry
- 1 14 oz can chickpeas, drained
- 1 1/2 cup low-sodium vegetable broth
- 4 1/2 cups water
- 1 Tbsp parsley
- 1/2 tsp thyme
- 1 tsp oregano
- 1 tsp ground black pepper
Instructions - Combine all ingredients in slow cooker.
- Cover and cook on low 6-8 hours or until vegetables are tender.
