Ingredients
  • 2 carrots, chopped
  • 2 onions, chopped
  • 3 celery stalks, chopped
  • 2 garlic cloves, minced
  • 1 zucchini, chopped
  • 2 cups kale, chopped
  • 1 28 oz can crushed tomatoes
  • 1/2 cup barley, dry
  • 1 14 oz can chickpeas, drained
  • 1 1/2 cup low-sodium vegetable broth
  • 4 1/2 cups water
  • 1 Tbsp parsley
  • 1/2 tsp thyme
  • 1 tsp oregano
  • 1 tsp ground black pepper

Instructions
  1. Combine all ingredients in slow cooker.
  2. Cover and cook on low 6-8 hours or until vegetables are tender.
