Liven up your holiday dinner with this fantastic and perfectly sweetened dish! The ginger adds a little spice and zing to vitamin-rich sweet potatoes.
Ingredients:
2-1/2 lbs sweet potatoes, peeled and cut into cubes
¼ cup brown sugar
2 tbsp orange juice
1 tbsp light butter (such as Land O’ Lakes Light Whipped Butter)
1 tsp grated fresh ginger
Directions:
1 In a large covered pan, boil potatoes until tender, about 20 minutes. Drain and transfer to a large baking dish sprayed with cooking spray.
2 In a small saucepan, combine brown sugar, orange juice, light butter and ginger. Cook until butter melts; stir well and pour over sweet potatoes.
3 Bake at 375, uncovered for about 35 minutes until potatoes are tender and caramelized, stirring once.
