Ingredients
  • 2 cups fresh snow peans
  • 1/2 cup carrots, sliced thinly
  • 1 cup red bell pepper, sliced thinly
  • 1 cup sliced mushrooms
  • 1 green onion, sliced
  • 2 tablespoons lite soy sauce
  • 8 ounces whole grain pasta such as penne
  • 1 tablespoon finely chopped or ground peanuts

Instructions
  1. Cook pasta according to package directions.
  2. In a non-stick skillet sprayed with cooking spray, stir-fry vegetables over medium heat until tender-crisp.
  3. Add soy sauce and pasta. Toss and heat for a few minutes. Sprinkle with peanuts.
