Looking for the ultimate snack to serve to your guests? Everyone loves a colorful dip! It's easy to make, low fat, and it tastes as good as it looks!

| 1 | Steam spinach until just wilted; about 2-3 minutes. Drain excess water. In a food processor or blender, puree the spinach, garlic, green onions, beans and 2 tbsp of lemon juice until smooth. |
| 2 | Remove from blender and fold in artichoke hearts and the remaining 1 tbsp of lemon juice. Add salt and pepper to taste. |
| 3 | Serve at room temperature or chilled. Serve with fresh cut veggies, toasted baguette slices, crackers or pita wedges. |
| 4 | Yield: 3 cups. Serving Size: 1/4 cup. |
