Looking for the ultimate snack to serve to your guests? Everyone loves a colorful dip! It's easy to make, low fat, and it tastes as good as it looks!
Ingredients:
5 ounces fresh spinach, rinsed and stemmed
2 garlic cloves, minced
15 ounce can butter or cannelloni beans, drained
½ cup chopped green onions
3 tbsp fresh lemon juice
15 ounce can artichoke bottoms, finely chopped
Salt and black pepper to taste
Directions:
1 Steam spinach until just wilted; about 2-3 minutes. Drain excess water. In a food processor or blender, puree the spinach, garlic, green onions, beans and 2 tbsp of lemon juice until smooth.
2 Remove from blender and fold in artichoke hearts and the remaining 1 tbsp of lemon juice. Add salt and pepper to taste.
3 Serve at room temperature or chilled. Serve with fresh cut veggies, toasted baguette slices, crackers or pita wedges.
4 Yield: 3 cups. Serving Size: 1/4 cup.
