Ingredients
  • 1 cup brown rice
  • 2 cups water
  • 1 cup diced tomatoes
  • 1 medium cucumber, chopped
  • 1/2 cup greek style olives, pitted and chopped
  • 1/2 cup chopped red onion
  • 1/2 cup chopped fresh basil or parsley
  • 1-2 cups fresh spinach leaves, trimmed
  • 1/2 cup reduced-fat feta cheese
  • 1 tablespoon olive oil
  • Juice of one lemon

Instructions
  1. Cook rice according to package directions. When finsihed, remove cooked rice from pan and cool in the refrigerator in a covered container.
  2. In a large bowl, combine cooked cooled rice, and the remaining ingredients EXCEPT the tomatoes. Stir gently until well blended.
  3. Cover and refrigerate until well chilled. Flavors taste best when made 24-48 hours ahead of time.
  4. Mix in chopped tomatoes when ready to serve. This salad works well as a main meal when paired with chicken, fish, beans or tofu!
