Small portabella mushrooms make the perfect platform for pizza. Their meaty texture holds up well and adds an earthy flavor.
Ingredients:
6 small portabella mushrooms (usually found pre-packaged in the produce aisle)
6 tablespoons no salt added tomato sauce
12 tablespoons reduced fat mozzarella
2 teaspoons dried basil
Balsamic vinegar
Directions:
1 Remove stems from mushrooms. Sprinkle with balsamic vinegar.
2 Grill mushrooms stem side down for about 3 minutes.
3 Turn over, add 1 tbsp tomato sauce to each mushroom. Sprinkle with basil and add 2 tbsp shredded mozzarella to each mushroom.
4 Grill additional 3 minutes or until cheese is melted.
5 Serving Size: 1 mushroom.
