Ingredients - 2 cups cooked lower sodium garbanzo beans
- 1 cup cooked lower sodium navy beans
- 1 cup cooked lower sodium kidney beans
- 4-6 radishes – washed and sliced
- 1 large carrot – peeled and grated
- 1 small red onion – sliced
- 1/8 cup apple cider vinegar
- 2 tablespoons extra virgin olive oil
- 1 teaspoon fresh dill – optional
- Salt and pepper to taste
- 2 teaspoons fresh lemon juice
Instructions - Combine all ingredients in a large bowl and mix well. Refrigerate for two hours until chilled.
