Ingredients
  • 2 cups cooked lower sodium garbanzo beans
  • 1 cup cooked lower sodium navy beans
  • 1 cup cooked lower sodium kidney beans
  • 4-6 radishes – washed and sliced
  • 1 large carrot – peeled and grated
  • 1 small red onion – sliced
  • 1/8 cup apple cider vinegar
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon fresh dill – optional
  • Salt and pepper to taste
  • 2 teaspoons fresh lemon juice

Instructions
  1. Combine all ingredients in a large bowl and mix well. Refrigerate for two hours until chilled.
