Ingredients
  • 1 cup uncooked brown rice
  • 2 cups water
  • 1 small can (8 oz) no salt added tomato sauce
  • 1 green bell pepper, diced
  • ½ red onion, diced
  • Garlic and crushed red pepper to taste

Instructions
  1. Brown rice using cooking spray over medium heat in a non-stick skillet.
  2. When rice is slightly browned; add water, tomato sauce, green pepper, onion, garlic and crushed red pepper.
  3. Bring to a boil over high heat. Once boiling, reduce heat to low; cover and simmer until all of the water is absorbed, about 40 minutes. Fluff with a fork and serve.
  4. Tip: Choose brown rice with the most fiber by comparing labels.
