Ingredients - 1 cup uncooked brown rice
- 2 cups water
- 1 small can (8 oz) no salt added tomato sauce
- 1 green bell pepper, diced
- ½ red onion, diced
- Garlic and crushed red pepper to taste
Instructions - Brown rice using cooking spray over medium heat in a non-stick skillet.
- When rice is slightly browned; add water, tomato sauce, green pepper, onion, garlic and crushed red pepper.
- Bring to a boil over high heat. Once boiling, reduce heat to low; cover and simmer until all of the water is absorbed, about 40 minutes. Fluff with a fork and serve.
- Tip: Choose brown rice with the most fiber by comparing labels.
