Ingredients
  • 2 tbsp olive oil
  • 1 red onion, chopped
  • 1 zucchini, diced
  • 1 carrot, diced
  • 4 garlic cloves, chopped
  • 4 Roma tomatoes, seeded and diced
  • 1 28-ounce can crushed tomatoes
  • 1 bay leaf
  • 1 rosemary sprig
  • 15 basil leaves, chopped
  • Black pepper to taste

Instructions
  1. Heat oil in a large skillet over medium heat. Add the onion, zucchini and carrot and sauté for 8 minutes. Add the garlic and sauté for about 1 minute.
  2. Add the tomatoes, bay leaf, black pepper and rosemary. Cook, uncovered for 15-20 minutes. Remove the bay leaf and rosemary sprig. Add the basil and add more seasonings if desired.
  3. Serve over cooked whole wheat pasta or use as a sauce for chicken.
