Wild rice stuffing is a terrific alternative to bread stuffing. It has a nutty flavor and is simply devine when combined with fresh herbs and cranberries!
Ingredients:
1 cup uncooked wild rice
1 cup diced celery
3 cups low sodium vegetable broth
1 tbsp olive oil
1/4 cup chopped onion
1/3 cup chopped fresh mushrooms
1 tbsp fresh sage
1 tbsp fresh thyme
1/2 cup dried cranberries
Pepper to taste
Directions:
1 Cook rice in broth according to package directions.
2 Meanwhile, saute onions, celery and mushrooms in olive oil for 2-3 minutes.
3 Combine mixture with cooked rice and stir in herbs and cranberries.
4 Yield: about 6 cups (or enough to stuff a 10 pound turkey). Serving Size: 1/2 cup.
