Perk up plain old rice with sesame, chilis, cilantro and peanuts. Serve as a side dish or make it main meal by topping with grilled chicken or tofu.
Ingredients:
1 cup uncooked brown rice
2 teaspoons sesame chili oil
Juice of 1 lime
1 tablespoon rice vinegar
1 large carrot, shredded
3 green onions, sliced
Black pepper to taste
1/4 cup chopped dry roasted peanuts
2 tablespoons chopped cilantro
Directions:
1 Cook rice according to package directions. Set aside.
2 Whisk oil, lime juice, rice vinegar and black pepper in a small bowl.
3 Combine dressing mixture, rice, carrots, green onions and cilantro; toss to blend.
4 Sprinkle with peanuts. Serve warm or cold.
5 ENJOY!
