Perk up plain old rice with sesame, chilis, cilantro and peanuts. Serve as a side dish or make it main meal by topping with grilled chicken or tofu.

| 1 | Cook rice according to package directions. Set aside. |
| 2 | Whisk oil, lime juice, rice vinegar and black pepper in a small bowl. |
| 3 | Combine dressing mixture, rice, carrots, green onions and cilantro; toss to blend. |
