Ingredients
  • 1 ounce cellophane noodles (bean threads)
  • 1-2 tablespoons lite soy sauce
  • 1 teaspoon chili paste (found in the Ethnic section) or red pepper flakes to taste
  • 1 teaspoon sesame oil
  • 1 cup chopped, cooked chicken breast (about 3-4 ounces cooked)
  • 1/4 cup shredded carrots
  • 1/4 cup red onion
  • 6 large Romaine or Boston lettuce leaves

Instructions
  1. Cover cellophane noodles with boiling water and let stand for 5 minutes or until softened. Drain and rinse under cool water. Chop noodles.
  2. While noodles are soaking, combine red onion, shredded carrots, soy sauce, chili paste and sesame oil in a large bowl, stirring with a whisk.
  3. Add noodles and chicken to mixture and toss well to coat. Spoon about 1/4-1/3 cup into each lettuce leaf and roll up.
  4. Yield: 6 wraps/ 1 serving: 3 wraps
