Ingredients - 1 ounce cellophane noodles (bean threads)
- 1-2 tablespoons lite soy sauce
- 1 teaspoon chili paste (found in the Ethnic section) or red pepper flakes to taste
- 1 teaspoon sesame oil
- 1 cup chopped, cooked chicken breast (about 3-4 ounces cooked)
- 1/4 cup shredded carrots
- 1/4 cup red onion
- 6 large Romaine or Boston lettuce leaves
Instructions - Cover cellophane noodles with boiling water and let stand for 5 minutes or until softened. Drain and rinse under cool water. Chop noodles.
- While noodles are soaking, combine red onion, shredded carrots, soy sauce, chili paste and sesame oil in a large bowl, stirring with a whisk.
- Add noodles and chicken to mixture and toss well to coat. Spoon about 1/4-1/3 cup into each lettuce leaf and roll up.
- Yield: 6 wraps/
