Ingredients:
1 cup quinoa
2 peppers, diced (any color)
1 onion, diced
cucumber, diced=
cup reduced fat feta
cup light balsamic dressing
Salt and pepper to taste
2 tablespoons lemon juice
Directions:
1 Cook quinoa according to box directions. Cool once cooked through.
2 Once quinoa cooled, mix in peppers, onion, cucumbers, feta, salt and pepper, lemon juice and balsamic dressing.
3 ENJOY!
