Ingredients
  • 1 portobello mushroom
  • 1/2 teaspoon olive oil
  • 1 tablespoon tomato sauce
  • Sliced tomato
  • Sliced yellow squash or zuchinni
  • Fresh basil leaves
  • 1/4 cup shredded mozzerella
Instructions
  • Preheat oven to 450 degrees and spray a baking sheet with non-stick cooking spray.
  • Brush olive oil on all sides of the portabello mushrom cap and sprinkle with salt and pepper to taste.
  • Place mushrooom on baking sheet, top side down and spread tomato sauce on top. Layer with sliced tomato, squash (enough to cover the mushroom top), basil leaves and mozzarella cheese.
  • Bake for 3-5 minutes, or until cheese melts.
