Ingredients |
- 1 portobello mushroom
- 1/2 teaspoon olive oil
- 1 tablespoon tomato sauce
- Sliced tomato
- Sliced yellow squash or zuchinni
- Fresh basil leaves
- 1/4 cup shredded mozzerella

Instructions |
- Preheat oven to 450 degrees and spray a baking sheet with non-stick cooking spray.
- Brush olive oil on all sides of the portabello mushrom cap and sprinkle with salt and pepper to taste.
- Place mushrooom on baking sheet, top side down and spread tomato sauce on top. Layer with sliced tomato, squash (enough to cover the mushroom top), basil leaves and mozzarella cheese.
- Bake for 3-5 minutes, or until cheese melts.
