It's approaching faster than some may like. The day that many fear as ominous... a day that makes others feel helpless.

What is the day that so many seem to be dreading? April 15th? Doomsday? No! I am speaking of Valentine's Day!

Although the origin is shrouded in mystery, one thing we do know: It is a day for romance in the United States, Canada, Mexico, United Kingdom, France and Australia.

The days of spending over $250 on a dinner for two after waiting for a table for over four hours (if you are lucky to get one without reservations) may be the "old" and overly-expensive way of celebrating.

So does this mean that romance and elegance are gone, too? No way! In fact it may mean the opposite!

This year, why not go on a date in your own home? Play all those romantic songs that make you think of your loved one, decorate the table with red candles, chocolate candy kisses, a handwritten note, heart-shaped confetti, a great framed picture of the two of you, and a single rose.

Prepare the following foods and maybe draw a warm bubble bath where you and your loved one can sip cocktails after dinner.

Here's the dish I'll be preparing:

Tequila Salmon

Here's what you need for the marinade and main course:

3 Tbsp fresh orange juice
2 tsp extra-virgin olive oil
3 Tbsp Voodoo Tiki Platinum Reposado Tequila
1/2 Tbsp chopped fresh cilantro
1/2 tsp granulated garlic
1 dash salt
2 salmon fillets with skin, about 6 oz. each and 1" thick

Instructions:

Whisk together the marinade ingredients in a small bowl. Place the salmon fillets in a large, resealable plastic bag and pour in the marinade. Press the air out of the bag and seal tightly. Turn the bag to distribute the marinade, refrigerate for 30 to 45 minutes (or overnight).

Grill the salmon, flesh side down, over medium heat about 7 to 8 minutes (or until you can lift the fillets without them sticking). Turn, skin side down, and finish cooking for 3 to 5 minutes more.

Slide a spatula between the skin and flesh and transfer the fillets to serving plates. Serve with sliced grilled asparagus or yellow squash.

Red Hots Margarita (Valentine Margarita)

2 oz. Voodoo Tiki Reposado Tequila
1 oz. Goldschlager
1 oz. cherry juice
4 oz. cranberry juice
2 oz. fresh lime juice
1 oz. Grenadine
2 drops Tabasco sauce

Pour ingredients in shaker with ice. Shake and strain into two cinnamon-rimmed margarita or martini glasses, each with 3 Red Hots heart candies and a cherry. Serves two.

Or try this one that can serve as an after dinner drink and dessert!

Chocolate Covered Cherry Margarita
Lace martini glass with chocolate syrup
2 oz. Voodoo Tiki Reposado Tequila
2 oz. Cream de Cocoa
2 oz. cherry juice
1 oz. Grenadine
4 oz. cranberry juice

Pour ingredients in a shaker with ice. Shake and strain into two sugar-rimmed margarita or martini glasses. Garnish each with a chocolate covered cherry. Serves two.

My advice to all you dieters here at Diet.com: Let the day (or night) happen. No pressure, no expectations, just enjoy each others' company. Even if you wind up burning dinner, laugh it off and remember that what might be viewed as a "disaster" today is what usually makes for a good old memory later on. Have fun and worry about your weight the next day!
