Where shall I begin today? I'm going to talk today ALL ABOUT FOOD!
Tonight I'm embarking a new endeavor... "en papillote", otherwise known in French culinary language as cooking in a packet. For those who don't know, this is quite the flashy presentation for fine food preparation.
You wrap basic ingredients in individual parchment or aluminum packets (parchment being the high end version, aluminum being the easier to work with). The flavors of ingredients mix and mingle as the food steams, a healthy and relatively fast preparation to make dinner, although I imagine the assembling. But what can be healthier... good, honest, low-fat ingredients, steamed amongst each other, and how awesome is that? Delivered to your plate, a closed, steaming package of unknown goodness! The surprise alone is half the fun.
Tonight! An Asian sway... jumbo shrimp, baby bok choy and a whole slew of differing Asian mainstays and sauces; ginger, garlic, soy, hoisin, lime, scallions.
Excuse me folks while I wipe the drool.
The best rules about En Papillotes... there are no rules! Only recommendations. Like using delicate ingredients of seafood, chicken and veggies, knowing that everything will blend together in those fantastic little bags.
