Are you sick of my pumpkin recipes yet?! I'm not yet, so here's another one! This one is Paleo and has been approved by my non-Paleo sister who said they didn't taste healthy at all! A "win" in my book! Keep in mind these are made to be a treat and aren't meant to be a regular part of your daily eats!

Paleo Pumpkin Bars

Ingredients: 
  • 1/4 cup coconut flour

  • 1/4 cup coconut sugar (I used raw coconut crystals from coconut secret)

  • 1/2 tsp. pumpkin pie spice

  • 1/2 tsp. baking powder

  • 1 cup pumpkin

  • 2 eggs

  • 1/4 cup coconut oil

  • 1 tsp. vanilla

  • 1/3 cup chocolate chips (I used Enjoy Life Mini chocolate chips)

Directions: 
  1. Preheat oven to 350 degrees.

  2. In a mixing bowl combine your dry ingredients (the coconut flour, sugar, pumpkin pie spice, and baking powder).

  3. Next add in the pumpkin, eggs, coconut oil, and vanilla, and blend with a hand mixer.

  4. Lastly stir in your chocolate chips.

  5. Spread your batter into an 8x8 pan sprayed with olive oil.

  6. Bake for 25-30 minutes until a toothpick in the middle comes out clean.

  7. Enjoy!

Makes 9 Bars.
