The Vegan diet is going very well. You know when people say "if I can do it anyone can". I'm not going to say that about the vegan diet for a couple of reasons -- 1. I've been vegetarian for 25 years so I don't eat meat or chicken anyways, don't care for it or crave it. Not eating meat or chicken is a BIG deal for most people. My mom still laments that I don't eat her cooking with any meat in it, still!!! My struggles are fish and eggs and cheese. 2. I'm a stay at home mom and very lucky to have the time to cook meals like the one pictured below. Bringing meals to the office takes time and planning, some of the meatless meals and frozen veggie patties have dairy in them. And I don't know how many restaurants serve vegan dishes, have to scout it out.

If you are interested in starting a vegan diet then the best suggestion is to go slow, really slow is okay too, try not to buy one type of animal protein for one month and see how you do. I'm here to help :)

Those colorful foods on the plate: Quinoa stuffed cabbage, squash, asparagus and sweet peppers.

Look at all the fruit I can have! Vegan is not boring.

What a great looking plate Articmom, very colorful! While I don't think I could ever go vegan, lol, I can definitely see the benefit of skipping meat a couple days a week :)
