This week you can catch me in a special Diet.com video where I show you a yummy sandwich concoction that I put together - a delicious baked salmon and avocado sandwich.

For one sandwich:
2 slices of Ezekiel bread
1 fillet of wild-caught salmon
1-2 leaves Romaine lettuce
squirt of lemon juice (to keep avocado green!)
pinch of cayenne pepper (Find out why I love cayenne here
1/4 cup red onion slices
1/4 cup sliced tomato (3-4 slices)
Bake salmon fillet at 350 for about 20 minutes. Let it cool slightly to the touch - enough that you can pull it apart into bite-sized pieces without burning your fingers!
While your salmon is cooling, mash your avocado half with the cayenne pepper. Mix well!
Spread your avocado mixture onto a slice of bread, and add the lettuce, onion and tomato. Top your veggies with your baked salmon pieces, and your sandwich is ready to go!
If you have leftover salmon from your filet, keep it in the fridge for tomorrow's lunch.
