Hi Everyone, I've been on a vegan diet for 1 week. My version of a vegan diet is no animal protein or honey. It's difficult with no eggs or my favorite -- salmon. I am allowing myself one day a week where I can have animal protein. I've talked about this before in other posts that I have to allow a meal or two so I don't feel deprived. I went cold turkey (pardon the pun), it feels good, I feel good. No animals are being harmed for my food, it's a win - win.
B- granola with almond milk, ice tea
S- banana, pretzel rods
L - vegetable soup with quinoa rotini, orange juice
S - grapefruit, pretzel rods, hot tea
D - Tofu Pup, whole wheat (no eggs) hot dog bun, broccoli
The vegetable soup is out of this world, with celery, carrots, mushrooms, parsnips, red potato, sweet potato, scallions, quinoa rotini from Trader Joe's, crushed tomatoes and loads of spices.
Now I have another good reason to get to the farmer's market!
