Ever have one of those days where you just don't feel like cooking up a fancy meal, but at the same time you don't want to settle for a bowl of cereal for supper?
Whether it is lack of time or lack of motivation stopping you from spending time cooking in the kitchen, the trick is keeping healthful ingredients on hand to whip up a fast and easy meal in minutes.
Fortunately all you need is one pot, three ingredients, and 12 minutes to make an instant, healthy, one-dish dinner. Keep this in your recipe files at all times. It is the simplest meal ever.
1 box of couscous (I used a curry flavored kind)
1 zucchini (or any other veggies, fresh or frozen)
1 can of chickpeas (or beans or lentils), rinsed
1. Boil water according to couscous package directions. While water is boiling, dice the veggies (or merely open the bag of frozen veggies), and open the can of chickpeas. Rinse.
2. Add dry couscous to the water along with the veggies and chickpeas. Remove from stove.
3. Let sit for 10 minutes while the couscous cooks and the flavors absorb into the veggies and beans.
There you have it: a one dish meal that contains the necessary components of grains, veggies and protein. A box of couscous and a can of beans are shelf stable, and a bag of frozen veggies can remain in the freezer for many months.
If you have these three ingredients on hand at all times, you'll never be without a well-rounded meal.
