Ingredients
  • 2 pounds Crimini mushrooms, sliced
  • 2 cloves garlic, minced
  • Juice of one lemon
  • 1 teaspoon grated lemon zest
  • 1/2 cup chopped Italian parsley
  • 1 tablespoon olive oil
  • 1/2 cup shredded or shaved parmesan
  • Black pepper to taste

Instructions
  1. Mix mushrooms, lemon juice, lemon zest, garlic and olive oil in a large bowl and toss gently.
  2. Heat a large sautee pan over medium high heat and add the mushroom mixture. Sautee, stirring often, until mushrooms are slightly browned.
  3. Stir in chopped parsley and sprinkle with parmesan. Serve immediately.
