Ingredients - 2 pounds Crimini mushrooms, sliced
- 2 cloves garlic, minced
- Juice of one lemon
- 1 teaspoon grated lemon zest
- 1/2 cup chopped Italian parsley
- 1 tablespoon olive oil
- 1/2 cup shredded or shaved parmesan
- Black pepper to taste
Instructions - Mix mushrooms, lemon juice, lemon zest, garlic and olive oil in a large bowl and toss gently.
- Heat a large sautee pan over medium high heat and add the mushroom mixture. Sautee, stirring often, until mushrooms are slightly browned.
- Stir in chopped parsley and sprinkle with parmesan. Serve immediately.
