Ingredients - Per person:
- 1 4-ounce lean cut of tenderloin or filet mignon steak, trimmed of fat
- 1 tablespoon whole peppercorns (black or mixed colors)
Instructions - Process peppercorns in a food processor, peppermill or coffee grinder until slightly cracked.
- Rub the peppercorn mixture over both sides of the steak. Heat a nonstick pan to medium heat and spray with cooking spray.
- Cook the steak on both sides to desired doneness. Medium = 160 F and has a pale pink center. Well done = 170 F and has a gray or brown center.
- Try serving with garlic mashed potatos and steamed green beans!
