This recipe is amazing - lots of color and peppery flavor! Just assemble the ingredients in your crockpot and let it work its magic.
Ingredients:
1 pound lean beef round steak
1/2 teaspoon salt
1/2 teaspoon black pepper
2 teaspoons dried oregano
non stick cooking spray
1 14-ounce can no salt added diced tomatoes
3 tablespoons tomato paste
1 teaspoon Worcestershire sauce
1 red pepper, cut into strips
1 yellow pepper, cut into strips
1 small zucchini, cut into cubes
1 onion, diced
1 clove garlic, minced
Directions:
1 Trim any fat from meat. Cut meat into one inch pieces. Sprinkle meat with salt and pepper. Add meat to a non-stick coated pan and cook on both sides until brown. Transfer to a slow cooker.
2 Add canned tomatoes and tomato paste. Top with veggies.
3 Cover and cook on low heat for 10 hours or on high for 5 hours.
4 ENJOY!
