The creamy peanut sauce adds a warm richness to this pasta dish. A perfect meal to impress, that's ready in minutes!
Ingredients:
Peanut Sauce:
1/3 cup creamy peanut buter
1/4 cup water
2 tablespoons lite soy sauce
1 tablespoon rice vinegar
1 tablespoon lime juice
1/4 teaspoon red pepper flakes
1 teaspoon sugar

Pasta:
8 ounces dry linguini or soba noodles.

Vegetables:
2 cups frozen Oriental style vegetables

Meat or Tofu:
8 ounces cooked chicken
or
8 ounces cooked shrimp
or
2 cups cubed tofu

Cilantro to garnish
Directions:
1 Preparing the sauce: Mix peanutbutter, water, soy sauce, vinegar, lime juice, red pepper flakes and sugar together in a small sauce pan until warmed through.
2 Preparing the pasta and vegetables: Cook pasta according to package directions. During the last few minutes of cooking, add the frozen vegetables. Drain noodles and vegetables.
3 In a large pan, combine the noodles and veggies with the sauce, toss well, and heat over medium heat until warmed through.
4 To each serving, add 2 ounces chicken, 2 ounces shrimp, or 1/2 cup cubed tofu. Garnish with Cilantro.
5 ENJOY!

My son and I had this dish and enjoyed it. I would say it needs a bit more kick to it or a wider blend of flavors.

This dish does not reheat well but it was tasty. It would be a good substitute for someone who really loves Chinese ...
