Chilly weather is on the way which means it's the perfect time warm up and fill up with soup. Try a cup of savory mushroom and barely soup tonight!
Ingredients:
16 oz. fresh mushrooms, sliced
2 T. olive oil
1 onion, chopped
3 cloves garlic,minced
2 large carrots, diced
2 cans chicken broth
2-3 cans water
ΒΌ cup white wine
1 tsp. thyme
1 tsp. Mrs. Dash
1 tsp. garlic powder
1 cup barley
Salt and pepper to taste
Directions:
1 Add olive oil to soup pot. Saute onions till softened.
2 Add garlic, mushrooms, carrots, seasonings, white wine, broth and 2 cans water. Bring to boil.
3 Add barley and simmer 45-55 minutes till barley is cooked and soup thickens. Can add one more can of water if it becomes too thick.
4 Season with salt and pepper to taste.
5 Yield: 12 1-cup servings.
