Try this filling and fiber-rich side salad in place of rice or pasta. It makes a tasty side to chicken or tofu.
Ingredients:
1 cup, uncooked lentils
2 cups water
2 cups cauliflower florets
2 cups broccoli florets
2 cups cucumbers, sliced and quartered
1 large carrot, grated
1/2 cup chopped red onion
2 cups sliced fresh mushrooms
1/2 cup sliced olives
Directions:
1 Place lentils and water in a large saucepan; bring to boil. Cover, reduce heat, and simmer 20 minutes or until tender.
2 Drain well, and set aside to cool slightly. Toss lentils with the remaining ingredients, and serve.
3 ENJOY!
