Great as a side-dish or afternoon snack! This recipe makes a perfect summer salad when green beans and tomatoes are in full swing.
Ingredients:
3/4 pound green beans, trimmed
3/4 pound yellow wax beans, trimmed
2 cups chopped tomato
1 tbsp balsamic vinegar
2 teaspoons olive oil
4 cloves garlic, chopped
1/2 cup fresh basil, chopped (or 2 teaspoons dried basil)
1/2 cup crumbled feta cheese
Salt and black pepper to taste
Directions:
1 Cook beans in boiling water for 5 minutes or until crisp tender. Drain and rinse with cold water.
2 Combine tomatoes through basil in a large bowl and add green beans. Add salt and pepper to taste and toss gently. Top each serving with 1 tbsp feta cheese.
3 ENJOY!
