Ingredients
  • 1 large red bell pepper
  • 1/4 cup frozen corn kernels
  • 1/4 cup garbanzo beans, canned and rinsed
  • 4 small fresh mozzarella balls, chopped
  • 2 tablespoons chopped fresh basil
  • 2 green onions, sliced
  • 1 teaspoon olive oil

Instructions
  1. Heat all ingredients except red bell pepper over medium heat until heated through, about 5 minutes. Core and seed bell pepper and place ingredients inside.
  2. Place stuffed pepper in foil adding 1-2 tbsp of water to the bottom. Seal foil and bake at 350 degrees for 20 minutes or until bell pepper pierces easily with a knife.
