Ingredients - 4 cups old fashioned oats
- 1/2 - 2/3 cup thawed frozen 100% apple juice concentrate
- 1/3 cup honey
- 1 cup slivered almonds
- 1 teaspoon vanilla extract
- 1 1/2 tbsp ground cinnamon
- 1 cup dried cranberries
Instructions - Preheat oven to 350 F.
Combine the oats and almonds in a large mixing bowl.
- In a separate small bowl, mix honey, vanilla and apple juice concentrate and microwave for 1 minute. Mix liquid in with oat mixture.
- Sprinkle in cinnamon and toss. Spread on a cookie sheet. Bake for 35-40 minutes, stirring occasionally.
- Cool, add cranberries and stir.
Store in an airtight container at room temperature.
- Yield: 9 cups. Serving Size: 1/2 cup.
