Salsas are a low-fat, flavorful and easy to way to perk up any dish. From Mexican fare to chicken, beef, pork or fish - salsa will liven it up!
Ingredients:
1 cup frozen corn, thawed
2 cups chopped tomatoes
2 tablespoon chopped red onions
1/4 cup diced green bell peppers
2 tablespoons chopped cilantro
1/2 teaspoon cumin
1 small jalapeno, diced
1 tablespoon fresh lime or lemon juice
Salt and black pepper to taste
Directions:
1 Combine all of the ingredients in a bowl and season to taste with salt and pepper.
2 Allow salsa to sit in the refrigerator for about 20 minutes to allow flavors to combine.
3 Yiled: about 3 1/2 cups. Serving Size: 1/4 cup.
