Ingredients
  • 1 cup vegetables of choice, frozen or fresh - cut into bite size pieces
  • 1/2 cup low-sodium vegetable broth
  • 1 cup cooked brown rice
  • 1/2 can kidney beans (about 7 oz)
  • 2 garlic cloves, minced
  • Dill weed (fresh-snipped or dry) to taste
  • Pepper to taste

Instructions
  1. Saute the vegetables in the broth using a small pan on medium high heat until tender-crisp.
  2. Add the rice, canned beans and seasonings and cook until heated through.
