Ingredients - 1 cup vegetables of choice, frozen or fresh - cut into bite size pieces
- 1/2 cup low-sodium vegetable broth
- 1 cup cooked brown rice
- 1/2 can kidney beans (about 7 oz)
- 2 garlic cloves, minced
- Dill weed (fresh-snipped or dry) to taste
- Pepper to taste
Instructions - Saute the vegetables in the broth using a small pan on medium high heat until tender-crisp.
- Add the rice, canned beans and seasonings and cook until heated through.
