Ingredients - 1 Tablespoon olive oil
- 1 medium chopped onion
- 1 green bell pepper, chopped
- 1 teaspoon crushed garlic
- 2 cups low sodium chicken broth
- 2 cups cooked, diced and boned chicken or turkey
- 2 cups stewed tomatoes
- 2 cups lima beans, canned or cooked
- 2 cups whole kernel corn, canned or cooked
Instructions - Heat oil in a large pan. Add onion and pepper and cook in oil until tender.
- Add all remaining ingredients. Bring to a simmer.
- Serving Size: 1 cup.
