Ingredients
  • 1 Tablespoon olive oil
  • 1 medium chopped onion
  • 1 green bell pepper, chopped
  • 1 teaspoon crushed garlic
  • 2 cups low sodium chicken broth
  • 2 cups cooked, diced and boned chicken or turkey
  • 2 cups stewed tomatoes
  • 2 cups lima beans, canned or cooked
  • 2 cups whole kernel corn, canned or cooked

Instructions
  1. Heat oil in a large pan. Add onion and pepper and cook in oil until tender.
  2. Add all remaining ingredients. Bring to a simmer.
  3. Serving Size: 1 cup.
