Ingredients - 1 high fiber tortilla
- 1/4 cup lower sodium black beans, drained and rinsed
- 1/2 cup diced red potatoes
- 1 garlic clove, minced
- 2 tablespoons diced carrots
- 2 tablespoons diced canned ortega chiles
- 2 tablespoons chopped green onion
- 2 tablespoons diced yellow squash
- 2 tablespoons diced tomato
- 2 tablespoons reduced-fat shredded
- Swiss cheese
- 1/8 avocado, sliced
- 2 tablespoons salsa
Instructions - Saute veggies until tender-crisp. Place cheese on warmed tortilla.
- Top with sauteed veggies, avocado and salsa. Roll up tortilla.
