Ingredients
  • 1 high fiber tortilla
  • 1/4 cup lower sodium black beans, drained and rinsed
  • 1/2 cup diced red potatoes
  • 1 garlic clove, minced
  • 2 tablespoons diced carrots
  • 2 tablespoons diced canned ortega chiles
  • 2 tablespoons chopped green onion
  • 2 tablespoons diced yellow squash
  • 2 tablespoons diced tomato
  • 2 tablespoons reduced-fat shredded
  • Swiss cheese
  • 1/8 avocado, sliced
  • 2 tablespoons salsa

Instructions
  1. Saute veggies until tender-crisp. Place cheese on warmed tortilla.
  2. Top with sauteed veggies, avocado and salsa. Roll up tortilla.
