Ingredients - 2 large tomatoes, seeded and chopped
- 1 large red bell pepper, chopped
- 1 large green bell pepper, chopped
- 1 medium cucumber, peeled and chopped
- 2 celery stalk, thinly sliced
- 1/4 cup sliced green onions
- 3 cups no added salt tomato juice
- 2 Tbsp lime juice
- 2 Tbsp red wine vinegar
- 2 tsp Tabasco sauce
- 1/2 tsp low sodium Worcestershire sauce
- 1 garlic clove, minced
- 2 15 oz can low sodium black beans, rinsed and drained
- 1/4 cup fat-free sour cream
Instructions - Mix all ingredients except for sour cream in a large bowl.
- Cover and refrigerate for at least 6 hours, stirring occasionally. Serve with sour cream.
