Ingredients - 1 ripe avocado, peeled, pitted and cubed
- 4 apples (try Pink Lady or Granny Smith), cored and cubed
- 1 cup sliced strawberries
- ½ grapefruit, peeled and cut into small pieces
- 1 tbsp honey
- 1 tbsp lemon juice
- 1 tbsp chopped walnuts
- Spinach leaves, trimmed and washed
Instructions - Toss together fruit pieces and avocado.
- Drizzle honey and lemon juice over mixture and toss gently.
- Place spinach leaves on plates and divide fruit between plates.
- Serve with light raspberry vinaigrette or balsamic vinegar and whole grain crackers if desired.
- 1 Serving = 1/4 recipe over 2 cups spinach leaves.
