Ingredients
  • 1 ripe avocado, peeled, pitted and cubed
  • 4 apples (try Pink Lady or Granny Smith), cored and cubed
  • 1 cup sliced strawberries
  • ½ grapefruit, peeled and cut into small pieces
  • 1 tbsp honey
  • 1 tbsp lemon juice
  • 1 tbsp chopped walnuts
  • Spinach leaves, trimmed and washed

Instructions
  1. Toss together fruit pieces and avocado.
  2. Drizzle honey and lemon juice over mixture and toss gently.
  3. Place spinach leaves on plates and divide fruit between plates.
  4. Serve with light raspberry vinaigrette or balsamic vinegar and whole grain crackers if desired.
  5. 1 Serving = 1/4 recipe over 2 cups spinach leaves.
