Ingredients - ½ cup 100% apple juice
- 1 tbsp olive oil
- 1 cup shredded carrots
- 1 cup chopped celery
- ½ cup chopped onion
- ¼ tsp black pepper
- ½ tsp dried sage
- 8 cups dry cornbread cubes
- 1 cups finely chopped & peeled apples
- ¼ cup toasted wheat germ
- 1 cup vegetable broth
Instructions - Preheat oven to 350. Coat a larger skillet with olive oil. Add apple juice, carrots, celery and onion and cook until tender. Stir in spices.
- Lightly coat a three-four quart casserole dish with nonstick cooking spray. Place cornbread cubes, apples and wheat germ in dish and toss lightly.
- Add onion mixture and drizzle with enough broth to moisten and toss lightly again. Bake for 30-40 minutes.
