Kick start your morning with a veggie omelet. Fresh spinach leaves give this omelet color and extra flavor.
Ingredients:
½ cup egg substitute
¼ cup low-fat shredded cheese
2 tablespoons chopped onion
½ cup fresh spinach leaves
2 tablespoons chopped mushrooms
Directions:
1 Pour egg substitute into non-stick pan over low-medium heat. Once slightly cooked add veggies and cheese.
2 Fold egg over onto mixture and cook until desired.
3 ENJOY!
