Looking for a healthy, tasty appetizer? Serve this mix of portobello mushrooms, tomatoes and fresh basil over warm toasted baguette slices.
Ingredients:
4 portobello mushrooms, stemmed and cleaned
2 tsp olive oil
2 cloves garlic, minced
2 tbsp or more fresh basil, chopped
Salt and pepper to taste
2 tbsp grated parmesan cheese
1 red tomato, seeded and chopped
1 yellow tomato, seeded and chopped
Balsamic vinegar to taste (optional)
1 small baguette, cut into ¼-inch thick slices
Directions:
1 Brush mushrooms with olive oil. Grill on a lightly greased (use cooking spray or olive oil mister) grill rack over medium-high heat for 5 minutes on each side.
2 Chop mushrooms and place in a medium bowl. Add parmesan, garlic, basil, tomatoes and salt and pepper.
3 Drizzle with balsamic vinegar if desired. Toss to coat. Toast bread slices and top evenly with mushroom mixture.
4 1 Serving: 1/12 of brushetta and a 1-ounce slice of baguette.
5 ENJOY!
