Ingredients:
1 block extra firm tofu
2 tablespoons olive or vegetable oil
1 medium cucumber, peeled, seeded and chopped
1/2 cup plain low-fat yogurt
2 tablespoons reduced-fat mayonnaise
1 tablespoon minced fresh dill
1/8 teaspoon black pepper
Directions:
1 Drain and pat dry tofu, cut into 8 equal slices. Broil 5 inches from the heat or grill over medium heat, turning occasionally, for 10 minutes.
2 Meanwhile, combine remaining ingredients in a small bowl. Spoon over warm tofu; serve immediately. Or, to serve cold, spoon sauce over chicken and refrigerate several hours or overnight.
